Hot Pepper Extract

Hot pepper extracts are extremely powerful, and in order to make extract, you have to deal with alcohol. Which as you know is very flammable, so be careful. Herbologist John Christopher used hot pepper extract to stop heart attacks in people who had become unconscious. Which you can read about on our Spicy Health page. NEVER try to get an unconscious person to swallow this. Only place a few drops underneath their tongue with an eye dropper. The pepper, and resulting extract, must be over 100,000 on the Scoville scale in order be effective. Always have someone call 911 for an ambulance.

You will need…

  • Rubber gloves
  • Two glass jars with tight-fitting lids
  • Grain alcohol (ethanol), plain vodka or other organic solvent
  • Funnel
  • Coffee filters
  • Glass dish
  • Cheesecloth
  • Strainer

Directions

Put on your gloves and dice up your peppers of choice. Place the peppers in a glass jar, and add enough alcohol to cover them. Put the lid on the jar, shake it up, then leave them in the refrigerator for 3 or 4 days. Shaking the jar a few times a day over that course of time can be helpful.

Next, position a funnel over your second glass jar, and line the funnel with a coffee filter. Pour the pepper mixture from the refrigerated jar into the funnel, and let the liquid drain through into your second jar. Then remove the diced peppers from the coffee filter in funnel and put them back in your first jar. Pour alcohol over diced peppers you put back in the first jar until they’re covered, and put both jars in the refrigerator. Leave the jar with the diced peppers in it in there for another 4 days or so. Now repeat the process with the coffee filter and funnel on your second extraction of the diced peppers. You can now sample your extract by dipping a toothpick in and tasting it. If it is hot enough, then continue on to the next step.

Strain all the extract into a wide glass bowl or dish, so the liquid has as much contact with the air as possible. Cover the dish with some cheesecloth and set it in a dark place for a few days so that the alcohol can evaporate. After the alcohol has evaporated, put your extract in an eye-dropper, and your good to go.
