7 Pot Egg Salad Sandwich
This egg salad sandwich recipe is tangent of a fresh avocado recipe. We tried freshly grated Parmesan cheese and Yellow 7 Pot peppers for a spicy kick. Unless you really like things extra hot, we recommend removing the seeds and placenta of the pepper, and just using the pepper body. Let us know how you like it!
You will need…
- 6 hardboiled eggs
- 2 tablespoons mayonnaise
- 2 tablespoons spicy mustard
- 1 tablespoon freshly grated Parmesan cheese
- 1 teaspoon finely diced 7 Pot peppers
- Dash of salt and pepper
Combine all of your ingredients in a mixing bowl, and mash the ingredients together with a large spoon. Do your best to keep the eggs a bit chunky if you like them that way though. Eating it with lightly toasted bread is wonderful.
